Vinification
The best sauvignon blanc grapes are left on the vine to ripen for a few extra days, hand-picked, then after maceration are carefully pressed and run into new oak casks to ferment, and remain in barrel for several months to develop complexity.

Wonderful concentration - compare it to an expensive Californian Fumé Blanc. A wine to drink young, although the acidity and good intensity mean it will keep for another 2 years.
